tonight i made coo and pone. yum yum, n im not even eating it tonight.
Here we go.
Boil about 12 thinly sliced okras in 2 cups (1 can) of coconut milk, and 1 cup of skim milk.
Lower to simmer and let cook until okras are soft.
Add finely chipped onion, garlic, and green onions.
Add salt, pepper, n whatever seasonings you like. ( I added lawrys, black pepper, sea salt and some Mrs Dash)
In a seprate cup mix about 1 cup of cornmeal with enough water tho make a thick mush.
add this cornmeal mix to the okras in cocnut milk.
Keep stirring until heavily thickened.
Pour into a buttered dish (bowl, baking pan, whatever…)
Let sit for atleast 15 minutes before eating.
You ca slice and lightly fry in butter to warm up the next day.
